Apple Muffins



Ingredients
Dry Ingredients
1 cup spelt flour (see comments)
1 cup almond flour, try this or make your own with almonds and a blender/ magic bullet, etc.
1/3 cup coconut sugar, try this
1/4 tsp. mace
1 tsp. ground cinnamon
1/2 tsp. sea salt

Wet Ingredients
1 cup whole organic milk (from grass-fed cows) or 1 cup coconut milk
2 pasture eggs
1/4 cup organic butter melted, try this
1 tsp. organic vanilla extract, try this
1 tbsp. raw honey, try to find a source of local honey

Miscellaneous
1 large organic apple, diced or the equivalent
1/3 cup chopped pecans (or other nut), try this

How To:
1. Prep: Preheat oven to 400 degrees and line a cup cake pan with muffin liners or grease (with coconut oil, butter, etc.).

2. Combine and fill cups: Mix dry ingredients in a large bowl. Add all wet ingredients and combine--stir until just moistened. Add nuts and apples and mix until just combined. Spoon into muffin pan.

3. Cook: Bake for 20 minutes until toothpick in the center comes out clear.

Comments: We received four little apples from our son's karate instructor and I whipped this up very quickly so we could use them. The boys really enjoyed these muffins--they did not last long! I think you could easily substitute any type of flour into the recipe (for example, a nut or gluten free version). I typically fixate on apple recipes in the fall, so this feels a little (wonderfully) premature.... :)
